So here’s the deal, we all know that finding a sweet & tasty dragonfruit is next to impossible. Pitayas tend to be sweeter but even more difficult to find than the regular dragonfruit. So why even bother looking for it at all, you ask?! Because it’s freaking pretty. It’s giving 101 Dalmatians Cruela Deville realness & I live for it.
Plus, the fact that it’s usually not all that tasty isn’t a deal breaker if you use it in a cocktail. You’ll be adding the sweetness that it lacks by using simple syrup & soda- thus, making this super pretty, super yummy mojito worth all the drama!
For the Dragonberry mojito you will need:
-2oz Bacardi DragonBerry Rum
-3oz lemon lime soda
-fresh mint leaves
-1 lime cut into quarters
-1-2oz simple syrup
-1/2 dragonfruit
-1-2 cut strawberries
in a glass, combine strawberries, 1/2 of the dragon fruit (with rind) 3/4 of the limes,mint leaves,simple syrup & bacardi. Muddle together until mashed well. Add ice & whole cuts of dragonfruit. Add lemon lime soda over the mixture. Stir lightly & garnish with lime wedge & mint. Enjoy!
